根據官方紀錄上所記載,”Los Colmillos”(獠牙)葡萄樹種植於1950年。然而葡萄園的擁有者曼努埃爾·馬丁阿莫雷斯(Manuel Martin Amores)發誓說它早在1870年代以前就已經被種植,原因是他的祖父在做遺產登記時的疏誤。樹齡超過140年,收成量僅15hl/ha,如今我們看老藤葡萄酒彌足珍貴,事實上在1990年代,老藤卻被視為是生產力低、不值錢的作物。如今我們知道,真正的老藤是生產世界一流的葡萄酒優秀品質的關鍵,並且也是其偉大的濃度和力道決定因素。

釀造過程
以手工的方式採摘葡萄並裝入小箱子當中,然後直接送入釀酒廠。整個過程當中均是使用手工的方式處理。首先在釀酒廠中手工去梗和精選葡萄。其次在頂部開口的法國橡木桶(新橡木桶)中發酵和後製的精細修整,酒體必須與葡萄皮進行35天的泡皮程序。最後酒是通過重力壓榨法到新鮮的橡木桶,保存14個月。該酒沒有經過澄清及過濾。
品酒筆記
它的濃度與口感猶如兩倍的波爾多級數酒,開瓶後的香氣富含黑莓、藍莓、香草、胡椒和紫羅蘭、玫瑰系花香,口感單寧較重,口感強勁,但感覺絲毫感覺不到它的酒精濃度有15.51%。中期酒體細緻地轉變成甘韻,單寧漸柔,除了櫻桃以外,還出現些許剛熟的黑嘉麗香氣,諸多香氣與味道呈現了深度,各性豐富且強烈。建議別用醒酒瓶,會磨去太多個性。搭餐建議:油脂重的烤肉,牛羊排都非常適合。

Malolactic occurred in new French oak followed by 13 months of aging prior to bottling without filtration. Purple/black in color, it proffers a liqueur-like bouquet of spicy black fruits, incense, violets, tapenade, and truffle. Dense, powerful, rich, and loaded, it will benefit from 5-6 years of cellaring and drink well through 2029. Fans of low alcohol, elegance, and subtlety, look elsewhere. Stephen Tanzer’s International Wine Cellar | 91(+?) | Deep ruby. Intensely fragrant raspberry and candied cherry on the nose, with exotic gingerbread and apricot accents. Very fresh in the mouth, with energetic red and dark fruit flavors supported by bright acidity and supple tannins. Tannins build with air but fade into the lush, pliant fruit on the finish.
